JACK-O-LANTERN SANDWICH COOKIES

Halloween is the perfect time to get creative in the kitchen, and nothing screams Halloween spirit more than Jack-O’-Lantern-themed treats! We used our create a face jack-o-lantern stamping cookie cutter set to create these cookies, it's so much fun to choose different combinations of mouths and eyes! 

Let’s dive into this recipe, where classic sugar cookies meet a Halloween twist with a creamy black buttercream frosting filling that's sprinkled with festive little non-pareils sprinkles!

INSTRUCTIONS

  1. Whip up a batch of our perfect cut out sugar cookie dough and color orange with a few drops of orange gel food coloring. Chill dough for at least an hour.
  2. Roll out your dough and cut out your Jack-O-Lantern shapes. Stamp half your jack-o-lanters and have fun choosing mouth and eye combinations to cut out of them. Bake and let cool.
  3. Make a batch of your favorite buttercream frosting and color black using a few drops of black gel food coloring.  When coloring black frosting keep in mind that you can color to a charcoal gray, it will turn black as it develops over a few hours.
  4. Fill a piping bag fitted with a number 6 round decorating tip. 
  5. Pipe the outline on your solid jack-o-lantern cookies, then fill using back and forth lines of frosting.
  6. Smooth your frosting a bit with an offset spatula.
  7. Place your jack-o-lantern face cookie on top.
  8. Roll cookie edges in non-pareils. We chose a mix of princess pink and creamsicle orange non-pareils.
